Our family goes through about a loaf of bread per week. With grocery bills as high as they are, we have tried to make as much of what we can at home and this homemade bread recipe with yeast is what we recently tried. On top of the expenses, the ingredients list for most foods is so long that who only knows what all is really in it. We believe that our health is a direct result of what we consume. With only 5 ingredients, we know what we are consuming, it tastes considerably better than store bought bread, and it was a great family bonding experience for us to make it!
Homemade White Loaf Bread with Yeast
Ingredients
8-10 cups of all-purpose flour (King Arthur's organic)
4 c of warm water (100-100 degrees)
2 tbsp of active dry yeast
4 tbsp of oil (we used avocado oil)
1/2 c of honey or sugar
4 tsp of salt (we used Celtic Sea Salt)
Supplies
stand mixer or hand mixer or just your hands :)
plastic wrap or beeswax wraps (you can order these from us in our store) or buy them here
Directions
Step 1: Prepare the dough
Add all yeast, all water, and a pinch of sugar or honey to a mixing bowl and allow to rest for about 5 minutes until it becomes bubbly. If 10 minutes passes and it is not activated, you will have to start over.
Once it is active, add the remaining sugar or honey, all salt, all oil, and 3 cups of flour. Mix to combine.
Once combined, add another cup of flour and mix to combine. While mixing, add 1/2 of flour at a time. Once you get near 8 cups, the dough should begin to pull away from sides of the bowl. It should not be overly sticky. Add more flour, 1/2 cup at a time, if needed.
Step 2: Knead the Dough
Mix for 4-5 min with a mixer or with your hands on a lightly floured surface for 5-8 minutes.
Step 3: First Rise
Grease a large bowl with oil and place dough inside, turning to coat, Cover with a dish towel and allow to rise in a warm place until doubled in size. This should take approximately 1.5 hours.
Spray two 9x5" bread loaf pans generously with oil on all sides.
After it's risen, punch the dough down with two forks to remove air and use the forks to divide into two equal parts. Shape into long logs and place in greased loaf pans.
Step 4: Second Rise
Preheat oven to 350 degrees.
Cover the dough with 2 pieces of oiled plastic wrap and allow to rise four about 45 minutes. The dough should be about an inch above the pan.
Step 5: Bake and Store
Remove the plastic wrap and place in oven to bake for 30-33 minutes.
When finished, the tap the bread. It should feel hollow.
Take the bread out of the pans and allow to cool for at least 20 minutes on an oven rack.
Store in a loaf bread bag or an airtight container
